Pie Crust

This dough is a little sticky to work with, but it makes a wonderful light flaky crust. Using a food processor makes this easy. May also be made using a pastry blender.



In a food processor, using a blade attachment:

1 c & 2 Tbsp flour

1/2 tsp salt

1/3 c oil

Mix until crumbly.

Add:

2-3 Tbsp cold water

Mix until it clumps.

Roll between pieces of plastic wrap.

This makes enough for one single crust.

Double for a crust topping.


When you need to bake the crust without a filling, prick it repeatedly with a fork.
