Spicy Fried Chicken

I started making this as a new bride in 1994. It's been a favorite meal ever since. We like it with spaghetti & garlic bread.



In bowl combine:

1 Tbsp salt- use a little less

1 Tbsp sugar

1 tsp cornstarch

1 tsp paprika

1/2 tsp garlic salt

1/2 tsp black pepper

1/3 c flour


Rinse 1 lb chicken.

Pound thin or cut into small pieces.

Coat chicken in spices.

Coat a pan with oil.

Cook chicken over med heat, turning occasionally, until cooked through.

Add additional oil if necessary to avoid sticking.



Variation: Spicy Grilled Chicken





Combine:

1 Tbsp salt- use a little less

1 Tbsp sugar

1 tsp paprika

1/2 tsp garlic salt

1/2 tsp black pepper

2 Tbsp apple cider vinegar

2 Tbsp oil

Reserve some for basting.

Add:

1 lb chicken

Toss to coat.

Grill, basting occasionally.

The meat does NOT need to marinate for hours.

I normally grill it within minutes of making it.

Tastes great on a bun.
