Spinach Salad

Baby Spinach, bacon, croutons, hard boiled eggs & homemade dressing .



Dressing:

Combine in a small bowl:

1/4 c sliced red onions

2 Tbsp oil

1 Tbsp wine vinegar

1/2 tsp lemon juice

1/4 tsp sugar

1/4 tsp salt

1/4 tsp pepper

Set aside.

May make ahead.


When ready to eat, toss:

1 bag Baby Spinach/ Baby Arugula Blend (6oz)

above dressing


Toppings:

croutons

bacon, cooked & crumbled

hard boiled eggs, quartered
