Strawberry Froyo

This cold creamy concoction is a great way to use strawberries from picking season. Quick, easy & yummy.



3 c strawberries, sliced & frozen (if they aren't sliced, it'll still work, it will just take longer to process)

1/4 c sugar

1 c vanilla Greek yogurt (I use low fat)


Put everything in a food processor.

Process until smooth.

Serve.

This will be slightly melt-y, as shown, which is how we like it.

If you want it firmer, pop it in the freezer for a bit.

If you freeze it for a long time, it will be hard.

At this point you can put it in a food processor & pulse to return it to a soft serve consistency or let it thaw until you can scrape it out of the container with a spoon.

I love going to u-pick farms during strawberry season.



This is a great way to use the berries, year round. Slice berries into quarters, lay on a wax lined cookie sheet, freeze. When solid toss in a freezer bag.



For 15 years, we lived next to th strawberry capitol of Plant City, FL. Mom & Dad would drive down from NY and we'd fill the van with berries.
