Strawberry Vinaigrette

This sweet vinaigrette is a great way to use strawberries during peak season. Photo shows it served over a salad of arugula, red onion, slivered almonds, chicken and corn. A baked potato (or in this case mashed potato) makes a great side.



2 c whole strawberries

2 Tbsp honey

2 Tbsp apple cider vinegar

2 Tbsp olive oil

1/4 tsp pepper

Put all in a blender until smooth.

Keep chilled.
