Taralli



From the kitchen of Tindara "Tina" Ruspantini.

A friend of mine gave me her recipe I made a few changes to come up with this. You can add chocolate chips to the dough or roll the dough into a donut shape.


Using a wooden spoon, mix together:

2 eggs, beaten

3/4 c sugar

1/2 c milk

1/2 c oil

1 1/2 tsp lemon extract


Use a sifter to add these ingredients to the wet ingredients:

3 c flour

3 tsp baking powder

1/8 tsp salt

Use a wooden spoon to mix all together.

Sometimes the dough can be a little sticky, so sprinkle little by little some flour to make it less sticky.

Line cookie sheets with parchment paper.

Pour a little oil in a bowl. Dip hands in oil to roll the cookies.

Roll and drop cookies onto cookie sheet.


Bake @ 350, for 8 to 10 minutes

or until the bottom of the cookies are golden brown.

The tops stay white.


The icing is typical - Confectioner sugar, milk and lemon extract.

We don't ice the chocolate chip taralli.

Donut shaped. I made a ball, then used the handle of a wooden spoon to create the hole in the center.



How I made the knot shaped taralli...



With extra flour, it was still this sticky. Scoop a ball of dough.



Instead of oiling my hands, I rolled dough into ropes on a floured board.



Turn one end in.



Fold other end in.



Before and after baking. They expand.
