From the kitchen of Carla Wilson
Mix together:
1/2 c margarine, softened
1 c sugar
2 eggs
3 large bananas, mashed
2 c flour
1 tsp baking powder
1/2 tsp salt
1 c nuts, optional
Put in greased & floured bread pans.
Bake @ 350 for 1 hour
Optional (I usally skip this):
When cooled slightly & out of pan sprinkle with:
1 Tbsp butter, melted
cinnamon sugar
NOTES:
I love adding a crumb topping to my muffins. Crumb topping: 1/3 c packed brown sugar, 2 Tbsp flour, 1/8 tsp cinnamon, 1 Tbsp butter. Mix until coarse crumbs. Sprinkle on batter before baking. -Stephanie
