Dressing:
1 packet Seven Seas Zesty Italian dressing mix
olive oil
balsamic vinegar
Follow the instructions on the package SUBSTITUTING balsamic vinegar for regular vinegar.
Add:
1/2 tsp minced garlic (optional)
Set aside.
Cook to al dente:
1 box penne pasta
Chop up:
3-4 Roma tomatoes OR equivalent of cherry tomatoes, quartered
Cut into small cubes:
5-6 oz part skim mozzarella
Chop:
a bunch of leaves of fresh basil
Combine everything but dressing in bowl.
Toss with desired amount of dressing.
NOTES:
You can play with the proportions of the ingredients to suit you. We’ve thrown marinated grilled chicken into this salad too.
