Mashed Potatoes

Place in a large pot:

6 potatoes, peeled & cut into chunks

Cover with salted water.

Bring to a boil, then reduce heat to medium-low.

Cover & simmer until easily pierced with a fork, about 20 minutes.

Drain.

Return the potatoes to the pot.

Turn heat to high, and allow the potatoes to dry for about 30 seconds.

Turn off the heat.

Mash the potatoes with a potato masher a few times around the pot, then add:

1/2 c butter

1/4 c milk

Continue to mash until smooth and fluffy.

If too dry, add more milk.

NOTE

If you’re making this for a buffet, add extra butter to keep it from drying out. Also, more butter is delicious.
