Nana’s Meatballs

From the kitchen of Larry Galbraith

Stir together:

2 c breadcrumbs

1 c milk

Set aside.

Mix together with hands:

3 lbs ground chuck/ beef (80/20)

2 lbs ground pork

Add:

4 eggs, beaten

7 oz pecorino cheese

fresh basil, chopped

fresh parsley, chopped

8 cloves garlic, minced

the breadcrumbs & milk

salt & pepper

Mix together with hands.

Roll into balls.

Fry in oil.

Turn to fry other side.

Drain on papertowels.

Freeze for later use or add to pasta sauce.

Makes ~100 meatballs (1 oz)
