Sheet Pan Aloo Gobi

From the kitchen of Larry Galbraith

In a large bowl or pot:

1 medium head cauliflower, cut into small florets

2 medium russet potatoes, cut into 1″ cubes

1 yellow onion, chopped

2 Tbsp ginger, minced

5 Tbsp olive oil

2 tsp cumin seeds

1 tsp ground turmeric

Toss to coat evenly.

Spread on a baking sheet.

Roast @ 400, 15 minutes.

Toss the veggies again.

Roast @ 400, another 15 minutes.

Increase heat to 500 or broil.

Roast 10-15 minutes.

Garnish with:

fresh lime juice (1 lime)

1/2 c fresh cilantro

Serve with:

plain Greek yogurt
