Sweet Potato Fries

From the kitchen of AnnMarie Barkwell

Toss to coat:

2-3 large sweet potatoes, unpeeled, cut into wedges

2 Tbsp olive oil

3/4 tsp salt

1/4 tsp pepper

Put on a 13×9 pan, lined with foil, dull side up.

In a bowl combine:

1/4 c orange juice

1 1/2 tsp chili powder

1/2 Tbsp honey

Set aside.

Bake @ 450, 25-30 minutes, uncovered

Baste with o.j. mix, approximately 3 times, turning wedges to coat.

NOTES

  • The original recipe came with this dipping sauce, but I never make it.
  • 8 oz sour cream, 1/3 c fresh cilantro (or parsley), 1/2 tsp chili powder
