Taralli – Tina’s

From the kitchen of Tindara “Tina” Ruspantini

Using a wooden spoon, mix together:

2 eggs, beaten

3/4 c sugar

1/2 c milk

1/2 c oil

1 1/2 tsp lemon extract

Use a sifter to add these ingredients to the wet ingredients:

3 c flour

3 tsp baking powder

1/8 tsp salt

Use a wooden spoon to mix all together.

Sometimes the dough can be a little sticky, so sprinkle little by little some flour to make it less sticky.

Line cookie sheets with parchment paper.

Pour a little oil in a bowl. Dip hands in oil to roll the cookies.

Shape like balls, knots, donuts…

Bake @ 350, for 8 to 10 minutes

or until the bottom of the cookies are golden brown.

The tops stay white.

The icing is typical – Confectioner sugar, milk and lemon extract.

NOTES:

  • Sometimes we add chocolate chips. We don’t ice the chocolate chip taralli.

To shape like a knot, roll out a pencil shape & tie it in a knot. Or, as shown, roll into pencil shape & coil/ twist it so the ends are sticking up. For the donut shape, make a ball. Use a wooden spoon handle to form a hole in the center. The cookies puff when baked.
