Sauce:<\/p>\n

3 Tbsp oil<\/em><\/strong><\/p>\n

garlic<\/em><\/strong><\/p>\n

Gently heat garlic in oil. Don’t brown.<\/p>\n

piece of green pepper<\/em><\/strong><\/p>\n

salt & pepper<\/em><\/strong><\/p>\n

Stir a few times.<\/p>\n

Add:<\/p>\n

14 1\/2 oz can passed tomatoes<\/strong><\/em><\/p>\n

Cook slowly about 40 minutes.<\/p>\n

Line a Pyrex dish with sauce.<\/p>\n

Eggplant:<\/p>\n

Slice:<\/p>\n

1 lb eggplant<\/em><\/strong>, leave skin on<\/p>\n

Dip in:<\/p>\n

2 eggs, beaten<\/em><\/strong><\/p>\n

Then dip in:<\/p>\n

15 Tbsp bread crumbs
<\/strong><\/em><\/p>\n

6 Tbsp grated cheese<\/strong><\/em><\/p>\n

Oil a large Pyrex pan.<\/p>\n

Lay eggplant in oiled Pyrex.<\/p>\n

Drizzle oil over eggplant, not too much.<\/p>\n

Bake uncovered @ 375 for 15 minutes.<\/p>\n

Turn over, bake 10 minutes more.<\/p>\n

Bake until golden color.<\/p>\n

Lay eggplant in a Pyrex dish coated with sauce.<\/p>\n

Keep making layers with sauce between each layer.<\/p>\n

Bake @ 350 for 20 minutes, until sauce dries up a little.<\/p>\n

NOTES:<\/p>\n
