from:<\/p>\n<p><em><strong>2 lbs butternut squash<\/strong><\/em><\/p>\n<p>Cut into 1&#8243; cubes.<\/p>\n<p>Set aside.<\/p>\n<p>Using a food processor, mince:<\/p>\n<p><em><strong>1 c onion, cut in 1&#8243; chunks<\/strong><\/em><\/p>\n<p><em><strong>1 c carrot, cut in 1&#8243; chunks<\/strong><\/em><\/p>\n<p><em><strong>1 c celery, cut in 1&#8243; chunks<\/strong><\/em><\/p>\n<p>Process until it&#8217;s a fine textured paste.<\/p>\n<p>Set aside.<\/p>\n<p>In a large heavy saucepan, over medium heat:<\/p>\n<p><strong><em>3 Tbsp extra virgin olive oil<\/em><\/strong><\/p>\n<p><strong><em>2 Tbsp butter<\/em><\/strong><\/p>\n<p>When the butter is melted, add the onion, celery &amp; carrot mixture.<\/p>\n<p>Add:<\/p>\n<p><em><strong>1\/2 tsp kosher salt<\/strong><\/em><\/p>\n<p>Cook for about 5 minutes, stirring often.<\/p>\n<p>It should dry out &amp; just begin to stick.<\/p>\n<p>Add:<\/p>\n<p><em><strong>5 c stock<\/strong><\/em><\/p>\n<p>Bring to a boil.<\/p>\n<p>Add:<\/p>\n<p>the prepared squash<\/p>\n<p><em><strong>2 c arborio rice<\/strong><\/em><\/p>\n<p><em><strong>2 1\/2 tsp kosher salt<\/strong><\/em><\/p>\n<p>Return to a boil.<\/p>\n<p>Cover the pot with the lid.<\/p>\n<p>Reduce heat to maintain a simmer.<\/p>\n<p>Cook for 14 minutes or until the rice and squash are cooked and creamy.<\/p>\n<p>Turn off the heat.<\/p>\n<p>Add:<\/p>\n<p><em><strong>2 Tbsp butter, cut into pieces<\/strong><\/em><\/p>\n<p>Stir until incorporated.<\/p>\n<p>Add:<\/p>\n<p><strong><em>1\/2 c freshly grated Grana Padano or Parmigiano-Reggiano<\/em><\/strong><\/p>\n<p>Serve
