lightly coat with oil.<\/p>\n\n\n\n<p>Only add more oil if manicotti stick.<\/p>\n\n\n\n<p>Spread 1 Tbsp of batter, with back of spoon, to form a very thin circle.<\/p>\n\n\n\n<p>It cooks quickly.<\/p>\n\n\n\n<p>If the batter balls rather than spreads nicely,<\/p>\n\n\n\n<p>wipe pan with paper towel to soak up excess oil.<\/p>\n\n\n\n<p>Turn over when edges start to dry\/ curl.<\/p>\n\n\n\n<p>Should be lightly browned.<\/p>\n\n\n\n<p>Stack cooked manicotti on a plate.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Manicotti Filling:<\/h4>\n\n\n\n<p><em><strong>2 lb whole ricotta (4c)<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>4 eggs<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>3\/4 tsp salt<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>1\/4 tsp pepper<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>2 Tbsp parsley<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>1\/3 c romano cheese<\/strong><\/em><\/p>\n\n\n\n<p>Combine.<\/p>\n\n\n\n<p>Spread 1 Tbsp filling down center of shell.<\/p>\n\n\n\n<p>Fold edges in.<\/p>\n\n\n\n<p>Place folded side down, in a shallow pan coated with&nbsp;<em><strong>sauce<\/strong><\/em>, making only one layer.<\/p>\n\n\n\n<p>Generously spread&nbsp;<strong><em>sauce&nbsp;<\/em><\/strong>over manicotti.<\/p>\n\n\n\n<p>Top with<strong><em>&nbsp;grated romano<\/em><\/strong>.<\/p>\n\n\n\n<p>Cover with foil.<\/p>\n\n\n\n<p>Bake @ 375 for 25 minutes.<\/p>\n\n\n\n<p>Makes 24-30 manicotti<\/p>\n\n\n\n<p>These freeze great.<\/p>\n\n\n\n<p>Just place unbaked, filled manicotti, folded side down, on a sheet lined with wax paper.<\/p>\n\n\n\n<p>Place in freezer until firm. Put in freezer bag.<\/p>\n\n\n\n<p>No need to thaw before baking.
