From the kitchen of Stephanie Knewasser<\/h4>\n\n\n

In a 3 qt saucepan over low heat:<\/p>\n

1\/2 c sugar<\/strong><\/em><\/p>\n

1\/2 c mild molasses<\/strong><\/em><\/p>\n

2 tsp ginger<\/strong><\/em><\/p>\n

1 1\/2 tsp cinnamon<\/strong><\/em><\/p>\n

1\/3 tsp cloves<\/strong><\/em><\/p>\n

1\/2 tsp nutmeg<\/strong><\/em><\/p>\n

Stir until sugars are melted and incorporated..<\/p>\n

Remove from heat.<\/p>\n

Stir in:<\/p>\n

2 tsp baking soda<\/strong><\/em><\/p>\n

Mixture will foam up.<\/p>\n

Stir in until melted:<\/p>\n

1\/2 c butter, cut into chunks<\/strong><\/em><\/p>\n

Stir in:<\/p>\n

1 egg, beaten<\/strong><\/em><\/p>\n

Then add:<\/p>\n

3 1\/2 c flour<\/strong><\/em><\/p>\n

Stir in as much as you can.<\/p>\n

It will become dry & hard to stir.<\/p>\n

There will be excess flour. Don’t worry.<\/p>\n

Dump all of it onto a lightly floured surface, kneading in most of remaining flour.<\/p>\n

Any flour that doesn’t knead in, use when rolling to coat the board.<\/p>\n

Divide dough in half.<\/p>\n

Wrap\/ cover half & set aside so it won’t dry out.<\/p>\n

Preheat oven to 325.<\/p>\n

Roll to almost 1\/4″, use cookie cutters.<\/p>\n

If the dough dries out & is to hard to work with, wet your hands with a little water & knead the dough until manageable.<\/p>\n

Use a silicone baking mat or parchment lined cookie sheet.<\/p>\n

Bake until edges begin to brown, about 12 minutes, depending on size and thickness.<\/p>\n

Remove cookies from tray immediately or they will stick.<\/p>\n

If cookies do cool to tray, put tray back in oven for a minute.<\/p>\n

Cool on wire rack.<\/p>\n\n\n
