{"id":2912,"date":"2023-06-05T18:44:09","date_gmt":"2023-06-05T18:44:09","guid":{"rendered":"https:\/\/familyrecipesandmore.com\/wordpress\/?p=2912"},"modified":"2026-06-01T01:44:52","modified_gmt":"2026-06-01T01:44:52","slug":"cheesecake","status":"publish","type":"post","link":"https:\/\/familyrecipesandmore.com\/wordpress\/cheesecake\/","title":{"rendered":"Cheesecake"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\">From the kitchen of Stephanie Knewasser<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Beat:<br><em><strong>1\/2 c butter<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>16 oz cream cheese<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 1\/4 c sugar<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>3 Tbsp flour<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 1\/2 Tbsp lemon juice<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>16 oz ricotta cheese<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>4 eggs<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>3 Tbsp cornstarch<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 tsp vanilla<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beat until smooth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>16 oz sour cream<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Grease springform pan with&nbsp;<strong><em>butter<\/em><\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour into pan &amp; bake @ 325 for 1 hour.<br>Turn oven off &amp; LEAVE IN OVEN for 2 more hours.<br>It will fall a bit &amp; crack, so don&#8217;t worry.<br>Cool completely.<br>Cover store in fridge.<br>Before serving top with a can of cherry pie filling.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">NOTES<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bring cream cheese to room temperature.<\/li>\n\n\n\n<li>Minimal mixing.<\/li>\n\n\n\n<li>Do not open the oven door while baking.<\/li>\n\n\n\n<li>Put in fridge overnight.<\/li>\n\n\n\n<li>Don&#8217;t remove from springform pan until it&#8217;s cooled all night.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">My recipe is identical to this, only it uses cottage cheese instead of ricotta, same amount. However, you must put the cottage cheese through a sieve or food mill in order to get a smooth consistency. It&#8217;s supposed to be the cheesecake recipe from Sardi&#8217;s restaurant in Manhattan. Sardi&#8217;s was famous for its cheesecake.
