From the kitchen of Renee Wilson<\/h4>\n\n\n\n

Lightly butter<\/strong><\/em> a 9 1\/2″ springform pan.<\/p>\n\n\n\n

In a small bowl, mix:<\/p>\n\n\n\n

1 1\/2 c crushed graham crackers (about 7 oz)<\/strong><\/em><\/p>\n\n\n\n

1\/4 c sugar<\/strong><\/em><\/p>\n\n\n\n

5 Tbsp unsalted butter, melted<\/strong><\/em><\/p>\n\n\n\n

Mix until well combined.<\/p>\n\n\n\n

Press evenly into the bottom & about 1″ up the sides of the prepared pan.<\/p>\n\n\n\n

Bake @ 350 for 10 minutes.<\/p>\n\n\n\n

In a large saucepan:<\/p>\n\n\n\n

12 oz bag fresh cranberries<\/strong><\/em><\/p>\n\n\n\n

2 c water<\/strong><\/em><\/p>\n\n\n\n

1\/2 c sugar<\/strong><\/em><\/p>\n\n\n\n

Bring to a boil over med-high heat, stirring to dissolve sugar.<\/p>\n\n\n\n

Reduce the heat to med-low.<\/p>\n\n\n\n

Cook, stirring often to avoid scorching, until very thick & reduced to about 2 cups.<\/p>\n\n\n\n

Transfer to bowl & cool completely, stir often.<\/p>\n\n\n\n

In a mixing bowl, beat:<\/p>\n\n\n\n

3 8 oz pckgs cream cheese, at room temp<\/strong><\/em><\/p>\n\n\n\n

Beat until smooth, about 1 minute.<\/p>\n\n\n\n

Add:<\/p>\n\n\n\n

3\/4 c + 2 Tbsp sugar<\/strong><\/em><\/p>\n\n\n\n

Beat for 1 minute.<\/p>\n\n\n\n

One at a time, beat in:<\/p>\n\n\n\n

3 large eggs, at room temp<\/strong><\/em><\/p>\n\n\n\n

Beat in:<\/p>\n\n\n\n

1 1\/2 c cranberry mixture<\/strong><\/em><\/p>\n\n\n\n

1 1\/4 c sour cream<\/strong><\/em><\/p>\n\n\n\n

1 Tbsp cornstarch<\/strong><\/em><\/p>\n\n\n\n

Pour into the prepared crust.<\/p>\n\n\n\n

Dot the surface with spoonfuls of remaining cranberry mixture.<\/p>\n\n\n\n

Bake @ 350 for 15 minutes.<\/p>\n\n\n\n

Bake @ 325, 50-60 minutes longer.<\/p>\n\n\n\n

Bake until edges are puffed & lightly browned.<\/p>\n\n\n\n

Remove from oven.<\/p>\n\n\n\n

Run a thin knife around the inside of the pan to release the cheesecake from the sides, but leave the sides attached.<\/p>\n\n\n\n

Cool completely on a cooling rack.<\/p>\n\n\n\n

Cover the pan tightly with plastic wrap.<\/p>\n\n\n\n

Refrigerate at least 4 hrs or overnight.<\/p>\n\n\n\n

It can be made up to 2 days ahead.<\/p>\n\n\n\n
