{"id":3197,"date":"2023-06-12T15:37:41","date_gmt":"2023-06-12T15:37:41","guid":{"rendered":"https:\/\/familyrecipesandmore.com\/wordpress\/?p=3197"},"modified":"2023-10-23T13:32:37","modified_gmt":"2023-10-23T13:32:37","slug":"raspberry-pork-veggies","status":"publish","type":"post","link":"https:\/\/familyrecipesandmore.com\/wordpress\/raspberry-pork-veggies\/","title":{"rendered":"Raspberry Pork &#038; Veggies"},"content":{"rendered":"\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"420\" height=\"413\" src=\"https:\/\/familyrecipesandmore.com\/wordpress\/wp-content\/uploads\/raspberrypork.jpg\" alt=\"\" class=\"wp-image-3199\" srcset=\"https:\/\/familyrecipesandmore.com\/wordpress\/wp-content\/uploads\/raspberrypork.jpg 420w, https:\/\/familyrecipesandmore.com\/wordpress\/wp-content\/uploads\/raspberrypork-300x295.jpg 300w\" sizes=\"auto, (max-width: 420px) 100vw, 420px\" \/><figcaption class=\"wp-element-caption\">Photo by Stephanie Knewasser<\/figcaption><\/figure>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n<\/div>\n\n\n\n<h4 class=\"wp-block-heading\">From the kitchen of Stephanie Knewasser<\/h4>\n\n\n\n<p>Preheat oven to 375.<\/p>\n\n\n\n<p>Drizzle a little&nbsp;<em><strong>olive oil&nbsp;<\/strong><\/em>on bottom of a 16&#8243; x 12&#8243; baking sheet.<\/p>\n\n\n\n<p>Rub a:<\/p>\n\n\n\n<p><em><strong>1 lb pork tenderloin with<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>1 tsp Southwest seasoning<\/strong><\/em><\/p>\n\n\n\n<p>Place on oiled baking sheet.<\/p>\n\n\n\n<p>Roast pork until internal temp is 145<\/p>\n\n\n\n<p>(if it&#8217;s a small cut of meat, it could be ready in 20 minutes,<\/p>\n\n\n\n<p>if large could be 45 minutes).<\/p>\n\n\n\n<p>Cut 8 c of veggies:<\/p>\n\n\n\n<p><em><strong>sweet onions<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>asparagus<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>green beans<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>red\/ yellow\/ green peppers<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>carrots<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>zucchini<\/strong><\/em><\/p>\n\n\n\n<p>Combine veggies with:<\/p>\n\n\n\n<p><em><strong>3 Tbsp olive oil<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>2 1\/2 tsp roasted garlic herb seasoning<\/strong><\/em><\/p>\n\n\n\n<p>When pork internal temp reaches 145, add seasoned veggies to the pork pan.<\/p>\n\n\n\n<p>Veggies should be single layer, or they won&#8217;t cook properly.<\/p>\n\n\n\n<p>Bake 15 minutes or until veggies are tender.<\/p>\n\n\n\n<p>Let pork rest 3 minutes.<\/p>\n\n\n\n<p>Microwave for 30 seconds:<\/p>\n\n\n\n<p><em><strong>1\/4 c red raspberry jam<\/strong><\/em><\/p>\n\n\n\n<p>Pour melted jam over pork.<\/p>\n\n\n\n<p>Slice and serve.<\/p>\n\n\n\n<p>Makes 4 servings.<\/p>\n\n\n\n<p>NOTES<br><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>This recipe was inspired by a meal kit I bought at Publix. The first time I made it Scott commented, &#8220;I would order this at a restaurant.&#8221; <\/li>\n\n\n\n<li>The carrots take longer to cook than the other veggies.
