water:<\/p>\n\n\n\n<p><em><strong>1 1\/2 c dry cannellini beans<\/strong><\/em><\/p>\n\n\n\n<p>Drain.<\/p>\n\n\n\n<p>Place the beans in a large saucepan of water, bring to a boil, cook for 20 min.<\/p>\n\n\n\n<p>Drain.<\/p>\n\n\n\n<p>Return the beans to the pot, cover with plenty of cold water.<\/p>\n\n\n\n<p>Bring to a boil again.<\/p>\n\n\n\n<p>Add:<\/p>\n\n\n\n<p><em><strong>1 bay leaf<\/strong><\/em><\/p>\n\n\n\n<p>Cook until the beans are tender, 1-2 hours.<\/p>\n\n\n\n<p>Drain again.<\/p>\n\n\n\n<p>Remove bay leaf.<\/p>\n\n\n\n<p>Puree 3\/4 of the beans in a food processor, add a little water if needed.<\/p>\n\n\n\n<p>Set both aside.<\/p>\n\n\n\n<p>In a large saucepan, heat:<\/p>\n\n\n\n<p><em><strong>6 Tbsp olive oil<\/strong><\/em><\/p>\n\n\n\n<p>Add:<\/p>\n\n\n\n<p><strong><em>1 med. onion, finely chopped<\/em><\/strong><\/p>\n\n\n\n<p>Cook until it softens.<\/p>\n\n\n\n<p>Add:<\/p>\n\n\n\n<p><strong><em>1 carrot, chopped fine<\/em><\/strong><\/p>\n\n\n\n<p><strong><em>1 stalk celery, chopped fine<\/em><\/strong><\/p>\n\n\n\n<p>Cook 5 minutes more.<\/p>\n\n\n\n<p>Stir in:<\/p>\n\n\n\n<p><em><strong>1\/2 tsp thyme<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>3 medium tomatoes, peeled &amp; chopped fine<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>2 cloves garlic, crushed<\/strong><\/em><\/p>\n\n\n\n<p>Cook 8 min, stirring often.<\/p>\n\n\n\n<p>Pour in:<\/p>\n\n\n\n<p><em><strong>3 1\/2 c boiling water<\/strong><\/em><\/p>\n\n\n\n<p>Stir in beans &amp; bean puree.<\/p>\n\n\n\n<p>Season with:<\/p>\n\n\n\n<p><em><strong>1\/2 to 1 tsp salt, or to taste<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>pinch ground pepper<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>\u200b<\/strong><\/em>Simmer 15 minutes.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h4
