From the kitchen of Andrea Andros<\/h4>\n\n\n\n

Cook until crispy:<\/p>\n\n\n\n

8 slices bacon<\/strong><\/em><\/p>\n\n\n\n

Crumble and set aside.<\/p>\n\n\n\n

Discard most of bacon grease.<\/p>\n\n\n\n

Add to pot:<\/p>\n\n\n\n

remaining bacon grease<\/strong><\/em><\/p>\n\n\n\n

3 medium onions, chopped<\/strong><\/em><\/p>\n\n\n\n

Saute until soft & translucent, about 6 minutes.<\/p>\n\n\n\n

Add:<\/p>\n\n\n\n

3 c chicken stock<\/strong><\/em><\/p>\n\n\n\n

3 c water<\/strong><\/em><\/p>\n\n\n\n

Bring to a boil, then lower heat to a simmer.<\/p>\n\n\n\n

Add:<\/p>\n\n\n\n

3 lbs potatoes, peeled, cut into 1\/2 inch cubes<\/strong><\/em><\/p>\n\n\n\n

Cook until tender.<\/p>\n\n\n\n

In a small bowl, combine:<\/p>\n\n\n\n

1\/4 c flour<\/strong><\/em><\/p>\n\n\n\n

enough water<\/strong><\/em> to make a smooth liquid paste<\/p>\n\n\n\n

Whisk into potato mixture to thicken.<\/p>\n\n\n\n

In a food processor or blender, in batches, process:<\/p>\n\n\n\n

1\/2 lb (or more) grated cheddar cheese<\/strong><\/em><\/p>\n\n\n\n

about 4 c of the potatoes and broth<\/strong><\/em><\/p>\n\n\n\n

Process until smooth.<\/p>\n\n\n\n

Return to pot.<\/p>\n\n\n\n

Add:<\/p>\n\n\n\n

1 Tbsp of Sherry or Madeira<\/strong><\/em><\/p>\n\n\n\n

1 tsp Worcestershire<\/strong><\/em><\/p>\n\n\n\n

the cooked bacon<\/strong><\/em><\/p>\n\n\n\n

Season with:<\/p>\n\n\n\n

salt & pepper<\/strong><\/em><\/p>\n\n\n\n

Garnish with:<\/p>\n\n\n\n

chopped parsley<\/em><\/strong><\/p>\n\n\n\n
