{"id":3504,"date":"2023-06-19T13:52:01","date_gmt":"2023-06-19T13:52:01","guid":{"rendered":"https:\/\/familyrecipesandmore.com\/wordpress\/?p=3504"},"modified":"2026-06-22T00:21:06","modified_gmt":"2026-06-22T00:21:06","slug":"frittata-with-chard","status":"publish","type":"post","link":"https:\/\/familyrecipesandmore.com\/wordpress\/frittata-with-chard\/","title":{"rendered":"Frittata with Chard"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\">From the kitchen of Brian Barkwell<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Wash:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 bunch of chard<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut the stems from the leaves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut the stems into 1\/4&#8243; slices.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Coarsely chop the leaves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat in a heavy pan, over medium heat:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 Tbsp olive oil<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>1 medium onion, sliced thin<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for 5 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chard stems.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with&nbsp;<em><strong>salt<\/strong><\/em>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook for 4 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chard leaves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook until the leaves are tender, adding a little&nbsp;<strong><em>water<\/em><\/strong>&nbsp;if it gets dry.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Squeeze most, but not all, liquid from chard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large bowl:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>6 eggs<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>2 tsp olive oil<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>4 garlic cloves, chopped<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>a pinch of cayenne<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>salt &amp; pepper<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beat lightly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add chard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Over medium-low heat, warm a 10&#8243; skillet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When hot, add&nbsp;<strong><em>2 Tbsp olive oil<\/em><\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Swirl oil around to coat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add egg mixture. As the eggs set, lift the edges so the uncooked egg will flow underneath.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook until mostly set.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover the pan with a plate and carefully invert the frittata onto the plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add<em><strong>&nbsp;1 tsp olive oil<\/strong><\/em>&nbsp;to pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slide the inverted frittata back into the pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook 2-3 more minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slide onto a platter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve with<strong><em> sauce<\/em><\/strong> for lunch or dinner.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve on <strong><em>toast<\/em><\/strong> for breakfast.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Good warm or at room temperature.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">NOTES:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>One of the things I love about frittatas is that they can be eaten for breakfast, lunch or dinner.
