In a pan, over medium heat:<\/span><\/p>\n

1 c unsalted butter (2 sticks)<\/strong><\/em><\/p>\n

Cook, stirring constantly, for about 7 minutes.<\/p>\n

The butter will melt, then foam, then turn golden.<\/p>\n

You’ll see little specks (milk solids) begin to brown.<\/p>\n

Immediately transfer to a heatproof glass dish (like Pyrex) or it will burn.<\/p>\n

Cover & refrigerate until solid (~ 1 hr). Or freeze for 30 minutes.<\/p>\n

In a bowl, stir together:<\/p>\n

2 1\/2 c flour<\/strong><\/em><\/p>\n

1 tsp baking powder<\/strong><\/em><\/p>\n

1\/2 tsp baking soda<\/em><\/strong><\/p>\n

3\/4 tsp salt<\/strong><\/em><\/p>\n

Set aside.<\/p>\n<\/p>\n

In a mixer, cream together:<\/span><\/p>\n

the chilled brown butter<\/span><\/p>\n

1 c packed brown sugar<\/em><\/strong><\/p>\n

1\/2 c sugar<\/em><\/strong><\/p>\n

Cream until light & fluffy (~ 3 minutes).<\/p>\n

Add:<\/p>\n

2 eggs<\/strong><\/em><\/p>\n

2 tsp vanilla extract<\/strong><\/em><\/p>\n

Slowly add flour mixture, just until combined.<\/p>\n

Add:<\/p>\n

3\/4 c bittersweet chocolate chips<\/em><\/strong><\/p>\n

3 1\/2 oz bittersweet chocolate bar (70% cacao), chopped<\/em><\/strong><\/p>\n

Scoop\/ roll into balls.<\/p>\n

Place on cookie sheets lined with parchment or silicone baking mats.<\/p>\n

Top each with a pinch of sea salt<\/strong><\/em>.<\/span><\/p>\n

Bake @ 350, until golden, about 10 minutes, depending on size of cookies.\u00a0<\/p>\n

Cool 10 minutes to let them set before removing from cookie trays.<\/p>\n\n\n
