Set aside.<\/p>\n<p>In a 4 c measuring cup:<\/p>\n<p><strong><em>1 2\/3 c water<\/em><\/strong><\/p>\n<p><strong><em>3 Tbsp oil<\/em><\/strong><\/p>\n<p><em><strong>1 tsp sugar<\/strong><\/em><\/p>\n<p>Whisk together. Set aside.<\/p>\n<p>Put dough hook on mixer.<\/p>\n<p>Slowly add wet ingredients to dry.<\/p>\n<p>Mix for 2 minutes.<\/p>\n<p>Leave dough in bowl. Cover.<\/p>\n<p>Rest 10 minutes.<\/p>\n<p>Using dough hook, mix dough for 8 minutes on medium low.<\/p>\n<p>Knead by hand for 30 seconds.<\/p>\n<p>Place in a bowl. Cover.<\/p>\n<p>Refrigerate for 24-48 hours.<\/p>\n\n\n<h4 class=\"wp-block-heading\">Pizza Sauce<\/h4>\n\n\n<p>In a food processor:<\/p>\n<p><em><strong>28 oz can tomatoes, drained<\/strong><\/em><\/p>\n<p><strong><em>2 tsp sugar<\/em><\/strong><\/p>\n<p><strong><em>1\/4 tsp salt<\/em><\/strong><\/p>\n<p>Puree for 30 seconds.<\/p>\n<p>Set aside.<\/p>\n<p>In a pan, over medium\/ low heat:<\/p>\n<p><em><strong>1\/4 c oil<\/strong><\/em><\/p>\n<p><em><strong>3 garlic cloves, minced<\/strong><\/em><\/p>\n<p>Cook for about 2 minutes.<\/p>\n<p>Add:<\/p>\n<p><em><strong>1 Tbsp tomato paste<\/strong><\/em><\/p>\n<p><em><strong>3 anchovies, minced<\/strong><\/em><\/p>\n<p><em><strong>1 tsp oregano<\/strong><\/em><\/p>\n<p><em><strong>1\/4 tsp red pepper flakes<\/strong><\/em><\/p>\n<p>Stir for 30 seconds.<\/p>\n<p>Add pureed tomatoes.<\/p>\n<p>Cook 25 minutes or until thickened.<\/p>\n<p>Preheat a baking stone @ 500 for 1 hour.<\/p>\n<p>Coat a rectangular pan with oil.<\/p>\n<p>Spread\/ roll dough to fit pan.<\/p>\n<p>Cover with greased plastic wrap, rise 1 hour.<\/p>\n<p>Spread sauce over dough.<\/p>\n<p>Top with:<\/p>\n<p><em><strong>2 oz grated parmesan<\/strong><\/em><\/p>\n<p><em><strong>12 oz grated mozzarella<\/strong><\/em><\/p>\n<p>Reduce heat to 450.<\/p>\n<p>Bake pan on stone for 10 minutes.<\/p>\n<p>Rotate
