olive oil<\/strong><\/em><\/p>\n<p>Heat over medium heat.<\/p>\n<p>When hot add:<\/p>\n<p><em><strong>2 yellow onions, cut in half<\/strong><\/em><\/p>\n<p><strong><em>1 head garlic, cut in half<\/em><\/strong><\/p>\n<p><strong><em>1 lemon, cut in half<\/em><\/strong><\/p>\n<p>Place cut sides down.<\/p>\n<p><strong><em>1 bunch thyme (fresh)<\/em><\/strong><\/p>\n<p><strong><em>pinch red pepper flakes<\/em><\/strong><\/p>\n<p>Add:<\/p>\n<p><em><strong>2 c cannellini beans (dry)<\/strong><\/em><\/p>\n<p><em><strong>6 c cold water<\/strong><\/em><\/p>\n<p>Bring to a boil, then reduce to a simmer.<\/p>\n<p>Simmer for 2 hours or until tender.<\/p>\n<p>Add:<\/p>\n<p><em><strong>salt &amp; pepper<\/strong><\/em> to taste<\/p>\n<p>Remove paper from garlic &amp; onion.<\/p>\n<p>Heat a pan on the stove.<\/p>\n<p>Add:<\/p>\n<p><em><strong>2 Tbsp olive oil<\/strong><\/em><\/p>\n<p><em><strong>2 bunches kale or spinach, cut<\/strong><\/em><\/p>\n<p>Cook until almost wilted.<\/p>\n<p>Add a spoonful of beans &amp; broth to greens.<\/p>\n<p>Toast thick slices of <strong><em>bread<\/em><\/strong>.<\/p>\n<p>To serve place toasted bread in bowls.<\/p>\n<p>Top with greens &amp;
