Shells:<\/p>\n

2 eggs<\/strong><\/em><\/p>\n

3 Tbsp sugar<\/strong><\/em><\/p>\n

2 Tbsp oil<\/strong><\/em><\/p>\n

2 tsp lemon extract<\/strong><\/em><\/p>\n

1 c flour<\/strong><\/em>– add more until you can roll dough<\/p>\n

Roll dough as thin as possible. Use a round cutter.<\/p>\n

Cream Filling:<\/p>\n

Whip until light and fluffy:<\/p>\n

1 c heavy cream<\/strong><\/em><\/p>\n

Fold in:<\/p>\n

1 Hershey bar, grated<\/strong><\/em><\/p>\n

3 lb ricotta<\/strong><\/em><\/p>\n

1 c sugar<\/strong><\/em><\/p>\n

NOTES:<\/p>\n

I had a hard time making these. I added about an extra cup of flour. -Stephanie<\/p>\n

LENA’S RECIPE<\/p>\n

Shells:<\/p>\n

2 c flour*<\/strong><\/em><\/p>\n

* Start with 1 1\/2 c. Add more as needed.<\/p>\n

2 Tbsp sugar<\/strong><\/em><\/p>\n

1\/4 c butter, melted<\/strong><\/em><\/p>\n

1\/2 tsp salt<\/strong><\/em><\/p>\n

2 egg YOLKS<\/strong><\/em><\/p>\n

6 Tbsp white wine<\/strong><\/em><\/p>\n

Knead dough on heavily floured surface.<\/p>\n

Add as much flour as needed.<\/p>\n

Roll dough as thin as possible.<\/p>\n

Cut with round or diamond shaped cutter.<\/p>\n

Wrap dough around tube.<\/p>\n

Seal edges with water<\/strong><\/em>.<\/p>\n

Fry in oil<\/strong><\/em> until golden brown.<\/p>\n

Remove and drain on paper towel.<\/p>\n

Filling:<\/p>\n

3 lb ricotta<\/strong><\/em><\/p>\n

1 c sugar<\/strong><\/em><\/p>\n

1 tsp vanilla<\/strong><\/em><\/p>\n

1 c heavy cream, whipped<\/strong><\/em><\/p>\n
