{"id":9303,"date":"2026-06-05T19:44:52","date_gmt":"2026-06-05T19:44:52","guid":{"rendered":"https:\/\/familyrecipesandmore.com\/wordpress\/?p=9303"},"modified":"2026-06-05T19:48:31","modified_gmt":"2026-06-05T19:48:31","slug":"spinach-feta-frittata","status":"publish","type":"post","link":"https:\/\/familyrecipesandmore.com\/wordpress\/spinach-feta-frittata\/","title":{"rendered":"Spinach Feta Frittata"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">From the kitchen of AnnMarie Barkwell<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In a 10&#8243; pan (ovenproof if you have one):<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>2 Tbsp olive oil or butter<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>3 green onions, sliced<\/em><\/strong>, or any onion you have on hand<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saute 5 minutes or until soft.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>2 c fresh baby spinach (not frozen)<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saute 2 minutes or until wilted.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Evenly spread veggies over the bottom of the pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If the pan isn&#8217;t ovenproof, transfer veggies to a pie pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Set aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a bowl, whisk together:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>8 large eggs<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>3\/4 c lowfat cottage cheese<\/em><\/strong> or<strong><em> ricotta <\/em><\/strong>or no cheese<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>chives (optional)<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>parsley (optional)<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour over veggies.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season generously with <strong><em>salt &amp; pepper<\/em><\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sprinkle over top:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>4 Tbsp crumbled feta or goat cheese<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let rest 2 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bake at 375, 25 minutes or until edges are lightly browned.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let rest a few minues before serving.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">NOTES:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>These freeze beautifully! Let cool completely, wrap in plastic wrap, wrap in foil.<\/li>\n\n\n\n<li>Frittatas are so versatile. Feel free to eyeball\/ measure with your heart\/ experiment with ingredients.<\/li>\n\n\n\n<li>The frittata photographed is a bit overbaked. Oops!
