From the kitchen of Kay Putano
Mix together:
3 eggs
1 c sugar
2/3 c oil
1 Tbsp extract- almond, anise or vanilla
1 Tbsp baking powder
2 c flour
1 tsp salt
Add:
1 c (additional) flour
Pat into greased metal ice cube trays.
Bake @ 350, 30 min
Take from oven, slice while warm, place slices on a cookie sheet, cut side down.
Place under the broiler under lightly toasted.
Be careful not to over cook.
NOTES
- Be aware this dough expands as it bakes. I have better luck just making logs. I used almond extract and added 1 c toasted almonds to the biscotti pictured. – Stephanie
