Endive Patties

From the kitchen of Aunt Diomira

1 nice size ball of endive greens

Let boil until cooked.

Let cold water run through & squeeze good.

Then cut on board fine.

Then put in bowl.

Add:

4 eggs

6 Tbsp basil

6 Tbsp oil

salt & pepper

Mix all up good then take with fork & roll in bread crumbs.

Bake in glass dish with a little oil under.

Bake covered @375 for 15 minutes, uncovered for 10 minutes
