Ricotta Gnocchi -Luisa’s

From the kitchen of Luisa Fortunati

Mix together:

500 grams ricotta

1 egg

12 grams Parmigano Regggiano

pinch of salt

Gradually add:

300 grams flour

Mix to form the dough.

Cut into pieces.

Place gnocchi in boiling water.

When they float to the surface, drain.

Serves 4.
