Sweet Potato Pie

From the kitchen of Marlene Knewasser

1 c sugar

2 eggs

1 tsp vanilla

1/2 tsp salt

3 c sweet potatoes, cooked & mashed

2/3 stick butter or margarine, softened

Mix all together.

Put in a buttered 1 1/2 quart casserole.

Topping:

1/2 c brown sugar

2/3 c butter, soft

1/2 c flour mixed with 1/8 tsp baking powder

1 c pecans, chopped

Mix together.

Spread on top of potato mixture.

Bake @ 350 for 30-40 minutes until top is brown & crunchy

NOTES

I acquired this recipe from a lady in Carlisle, Ohio, in 1975. This is a great dish to have with any pork roast or turkey dinner. It is almost like a dessert! – Marlene
