Sandwich Cookies

From the kitchen of Connie Putano

Cream:

1/2 c butter or oleo

1/3 c sugar

Add:

1 egg YOLK

1 tsp vanilla

Add:

1 1/2 c flour

1/2 tsp salt

Roll dough flat.

Use a whiskey glass, or round cutter of that size, to cut circles.

Make a window in half of them using the small end of a funnel.

Bake at 375 for 8-9 minutes.

Cool.

Sandwich solid & window cookies with raspberry jelly.

Just before serving dust with confectioner sugar .

Makes 23 2 1/4″ cookies

NOTES

  • When rolling dough, put between 2 sheets of plastic wrap for easier handling. -Stephanie
