Combine:
2 c All Bran cereal
1 1/4 c milk
Let stand 5 minutes or until softened.
Add:
1 egg
1/4 c oil
Mix well.
Add:
1 1/4 c flour
1/2 c sugar
1 Tbsp b. powder
1/4 tsp salt
Stir just until combined.
Coat muffin tin with cooking spray or line with paper.
Fill cups half way.
In the center of each muffin add:
1 tsp jam (raspberry, strawberry, cherry…)
Top each muffin with batter, covering jam so it won’t spread.
Top with:
cinnamon
brown sugar
Bake @ 400, 15-20 minutes or until toothpick inserted comes out clean.
Makes 12 muffins.
