Start by preparing Vigo yellow rice according to package directions.

Cook according to package directions:

Old El Paso chicken taco seasoning

chicken

Shred cooked chicken.

Top with:

tomatoes, chopped

corn- canned, boiled , steamed, scraped off the cob…

avocado, sliced or guacamole

Mexican cheese, shredded

lettuce, shredded

seasoned black beans* see recipe below

sour cream

ranch dressing

NOTES

  • I put everything out buffet style, so everyone can customize their bowls, taking more of what they like, omitting what they don’t. 
  • Short on time? Shred a rotisserie chicken.
