Egg Fu Yung Hi

Make white rice, about 1/2 c a person.

Chop veggies:

peppers

onions

shredded carrot

or whatever veggies you like

Small pieces of ham, cold cuts or leftover baked ham

Sauté the veggies in olive oil.

Add 1 beef bullion cube.

Mash the bullion cube when soft enough to.

Season with salt & pepper.

Put eggs in bowl (2 per person).

Add veggie mix to egg & stir together.

In a saucepan, bring to a boil, then simmer on low for a few minutes:

1 can tomato sauce

1 can small young peas, drained

little ginger

little sugar

In a frying pan:

oil or butter

1 ladle full of egg mix.

Continue making omelets until egg mixture is gone.

To serve:

a scoop of white rice

1 omelet

top with generous amount of tomato mixture
