Summertime Angel Hair

Cook:

8 oz angel hair according to package directions.

Drain.

In a sauté pan:

1 tsp olive oil

2 garlic cloves, minced

Cook over medium heat just until the garlic begins to color.

Remove pan from heat.

Add:

1/2 c dry white wine

Return to heat.

Cook until the wine is reduced by half, 1-2 minutes.

Stir in:

1/4 c freshly squeezed lemon juice

1 c chopped tomato

Put angel hair in serving dish.

Top with tomato mixture.

Top with:

1/4 c basil leaves, chopped small

2 Tbsp freshly grated Parmesan

freshly ground black pepper

Toss & serve immediately.

NOTES

  • The squeezed lemon, basil leaves & fresh tomato are what makes this so good. Do not substitute with bottled juice, dried basil or canned tomatoes.
