Preheat oven to 350.
Grease & flour 2 9″ round baking pans.
Combine:
2 c sugar
1 3/4 c flour
3/4 c cocoa
1 1/2 tsp b. powder
1 1/2 tsp b. soda
1 tsp salt
Add:
2 eggs
1 c milk
1/2 c oil
2 tsp vanilla
Beat on med speed for 2 min.
Add:
1 c water, boiling
Batter will be THIN.
Pour into pans.
Bake @ 350 for 30-35 min.
Toothpick poked in center should come out clean.
Cool 10 min, remove from pans to racks.
Cool completely.
For cupcakes, bake @ 350, 22-25 min
Makes 30 cupcakes.
Good with any of the following frostings:
- Whipped cream frosting
- Chocolate frosting
- Buttercream frosting

- Filling in cake photo: Cream: 2 small white chocolate pudding with 2 c whole milk. Stir in 2 c Cool Whip.
