From the kitchen of AnnMarie Barkwell
Place in a medium sized shallow bowl:
2 medium sized ripe avocados, mashed
Add:
2 Tbsp lemon juice
1 small garlic clove, minced
1/2 tsp salt
Add:
1/3 tsp cumin
1/2 tsp chili powder
black pepper, to taste
cayenne, to taste
strip of red bell pepper (1/8 of a pepper), diced*
cucumber, peeled, seeded & finely chopped*
tomato, diced*
* pepper + cucumber + tomato = 1/4 c
Avocados brown quickly once cut open, so make this just before serving.
Keep refrigerated.
