Italian Potato Salad

From the kitchen of AnnMarie Barkwell

Boil:

10-12 medium potatoes

Peel & slice thin OR coarsely mash.

Add:

1 c onion, chopped

4-5 Tbsp olive oil

4-5 Tbsp apple cider vinegar

4 tsp parsley

salt & pepper

Mix all together.

If too dry, add a little oil.

NOTES

This is not your typical American Potato Salad made with mayo. This Italian version is made with vinegar & olive oil. Mom eyeballs the amounts. I asked her to figure out the measurements for the 1st Family Cookbook. – Stephanie
