From the kitchen of AnnMarie Barkwell

In a large bowl, toss together:

1 box elbow macaroni, cooked as directed

3 hard boiled eggs, chopped

1/2 c diced celery

1/2 c diced onion

1/2 c green olives, chopped

1/4 c diced green pepper

1 small carrot, grated

In a separate bowl mix together:

1 1/2 – 2 c mayo

1 Tbsp mustard (if desired, use a little spicy mustard)

1/2 tsp salt

about 1/3 tsp fresh ground pepper

1 tsp sugar

Mix mayo mixture & macaroni together until macaroni is coated.

If too dry add more mayo.

Optional: Sprinkle top with paprika.

Macaroni Salad is great when you’re having a picnic. It goes well with burgers, sausages, pulled pork, grilled chicken…
