From the kitchen of Carla Wilson
Put 1 c raisins in a small bowl.
Cover with boiling water.
Add
1/2 tsp instant coffee to the water.
Set aside.
Cream:
1/2 c shortening
1 c sugar
2 eggs
1/4 c milk
Add:
1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Add:
1 2/3 c oatmeal
1/4 c coconut
1/2 c nuts, chopped
the raisins
Drop by heaping tsp onto greased cookie sheets.
Bake @ 350 for 12 minutes.
Makes about 3 dozen medium cookies.
