Potato Kale Soup

From the kitchen of Brian Barkwell

Wash: 1 large bunch kale

Drain well. Coarsely chop.

In a heavy soup pot:

1/4 c extra virgin olive oil

2 onions, sliced thin

Cook over med. heat until slightly brown, about 12 minutes.

Slice into 1/4″ slices:

1 lb potatoes

When onions are cooked add:

4 garlic cloves, chopped

Cook a few minutes.

Add potatoes & kale.

Add:

1 large pinch salt

Cook 5 minutes.

Stir occasionally.

Add:

6 c chicken broth

Bring to a boil.

Reduce heat to a simmer.

Simmer about 30 minutes.

OPTIONAL:

10 minutes before done, add:

1 c white beans

Garnish with olive oil & grated cheese
