Scalloped Potatoes

From the kitchen of AnnMarie Barkwell

Thinly slice:

3 medium potatoes (3 cups)

In a pot:

2 Tbsp butter

1/4 c onion, finely chopped

Add:

2 Tbsp flour

1/4 tsp salt

1/8 tsp pepper

Add:

1/4 c milk

Cook & stir until thick & bubbly.

Remove from heat.

Add:

1/4 c american cheese

Stir until melted.

Grease a 1 qt casserole

Put half of potatoes in.

Pour half of sauce in.

Add rest of potatoes.

Pour rest of sauce on top.

Bake @ 350, 35 minutes, covered.

Bake @ 350, 30 minutes, uncovered.

Let stand 5 minutes.

NOTE

Growing up, it was pretty much a given that we’d have scalloped potatoes the day after we had a ham. Mom cut up the ham and added it to the potatoes. -Stephanie
