Spinach Soup

The NIGHT BEFORE soak:

1/2 lb great northern beans

enough water to cover beans

The next day:

Boil the beans for 15 minutes.

Throw out water.

Boil again with:

2 qt water

for 15 minutes & keep water.

In a pan:

6 Tbsp oil

garlic

Brown garlic.

Take garlic out.

Add:

the beans

1 3/4 c potatoes, cubed

3/4 c celery, sliced

1 lb spinach– just rinse & put in

14 1/2 oz can strained tomatoes

2 qt water from the beans

1/2 qt additional water

Cook slowly for 1 hr 20 min.

After it cools off add:

1 1/2 c COOKED rice
