
From the kitchen of Stephanie Knewasser
In a bowl:
2 c all bran cereal (put in a food processor & pulse into a powder for a smoother texture)
1 c milk
1 egg
1/4 c oil
1/4 c applesauce
1 1/2 c shredded zucchini
1 Tbsp imitation vanilla
Stir.
Let set 10 minutes to soften the cereal.
Add:
1/2 c oat flour
1/2 c wheat flour
1/4 c sugar
2 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tsp chia seeds
Spoon into greased muffin tins.
Bake @ 400 for 20 minutes.
