Zucchini Bread

Beat well:

3 eggs

Add:

1 c oil

2 tsp vanilla

2 c sugar

Add:

1 1/2 tsp salt

1 1/2 tsp baking soda

3/4 tsp baking powder

1 tsp cinnamon

3 1/2 c flour

Add:

2 c grated, raw, unpeeled zucchini

Optional:

1/2 c walnuts or pecans, chopped

Grease & flour bread pans.

Bake @ 350 for 1 hour
