From the kitchen of AnnMarie Barkwell

Wash potatoes.

Cut into quarters or eighths (if using small salt potatoes, cut in half)

Coat lightly with:

olive oil (I use spray bottle)

Sprinkle with:

salt & pepper

oregano

paprika

Toss potatoes a few times.

Cover bottom of pyrex baking dish with:

olive oil or cooking spray

Arrange potatoes in pan.

Add:

1/4 c water

Bake covered @ 350 for 45 minutes.

Bake uncovered for 15 minutes, or until browned
