Oven Roasted Red Potatoes

From the kitchen of Mabel Knewasser

In a large plastic bag, combine:

2 lbs red potatoes, leave skins on & cut into 1/2″ thick slices

1/3 c vegetable oil

1 envelope dry onion soup mix

Shake until well coated.

Empty bag contents into an ungreased 13x9x2 pan.

Bake covered @ 350, for 25 minutes, stirring occasionally.

Uncover & bake 15 minutes longer or until potatoes are tender.

Makes 6-8 servings.
