Zucchini Cutlets

From the kitchen of AnnMarie Barkwell

Mix in a bowl:

1/2 c grated carrots

1/2 c chopped onion

1/4 c chopped small red pepper

1/4 c chopped small green pepper

1 c bread crumbs

1/4 c flour

1 tsp baking powder

3/4 tsp salt

Add:

3 c grated zucchini, skin on (2-3 if little- if big, cut seeds out)

1 egg, beaten

Shape 1/4 c scoops into patties.

Heat in a pan:

2 Tbsp olive oil

Brown cutlets on both sides.
